Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour a 9-inch loaf pan.
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Gradually mix in beaten eggs until well incorporated.
- In another bowl, whisk together flour, baking soda, and salt; then add to the butter mixture, stirring gently until just combined.
- Fold in mashed bananas, sour cream, and vanilla extract until well blended but do not overmix.
- Pour batter into prepared loaf pan and bake for about 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
