  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed bananas (about 3)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9-inch loaf pan.
  3. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Gradually mix in beaten eggs until well incorporated.
  5. In another bowl, whisk together flour, baking soda, and salt; then add to the butter mixture, stirring gently until just combined.
  6. Fold in mashed bananas, sour cream, and vanilla extract until well blended but do not overmix.
  7. Pour batter into prepared loaf pan and bake for about 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
