Ingredients
- 2.5–3 pound spaghetti squash
- 1 pound large raw shrimp (peeled and deveined)
- 4 garlic cloves (minced)
- 5 ounces baby spinach
- ½ cup low sodium vegetable broth
- 3 tablespoons butter (divided)
- Juice of ½ lemon
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Slice spaghetti squash into rings, place on the baking sheet, and brush with melted butter. Roast for 30-40 minutes.
- In a large skillet, melt remaining butter over medium heat, add garlic and crushed red pepper, cooking until fragrant.
