  • 1 1/4 pounds beef (sirloin or Angus), cut into 1-inch cubes
  • 1 large red onion, cut into large chunks
  • 18 cherry tomatoes
  • 2 packed tbsp parsley, finely chopped
  • 2 packed tbsp chopped cilantro
  • 2 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • Fresh ground pepper
  • 1 1/4 tsp kosher salt

Instructions

  1. Season the beef cubes with kosher salt and pepper.
  2. In a bowl, mix red onion, apple cider vinegar, salt, and olive oil; let sit for 5 minutes. Then stir in parsley, cilantro, garlic, water, black pepper, and red pepper flakes; refrigerate.
  3. Thread red onion chunks, seasoned beef cubes, and cherry tomatoes onto soaked bamboo skewers.
  4. Grill on high heat for about 2-3 minutes per side until medium-rare. Serve topped with chimichurri sauce.
