  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 4 tablespoons butter (for pudding)
  • 1 cup dark brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar
  • ½ cup cream
  • kosher salt

Instructions

  1. Preheat the oven to 350°F and prepare an 11 x 8-inch casserole dish.
  2. Combine chopped dates and baking soda in a bowl. Heat milk until scalded and pour over the dates; let cool.
  3. In separate bowls, mix flour with baking powder and salt; beat eggs in another bowl.
  4. Blend eggs, dark brown sugar, butter, and vanilla in a food processor. Gradually add the flour mixture followed by the date mixture until smooth.
  5. Pour batter into the prepared dish and bake for about 30 minutes or until set.
  6. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and salt until dissolved; gradually add cream and simmer until thickened.
  7. Poke holes in the baked pudding and pour one-third of the caramel sauce over it to soak. Let sit before serving with whipped cream.
