  • 2 cups finely crushed pretzels
  • 1/2 cup sugar
  • 3/4 cup melted butter
  • 8 ounces softened cream cheese
  • 1 cup sugar (for the cream cheese layer)
  • 8 ounces thawed whipped cream topping
  • 6 ounces strawberry-flavored vegan gelatin
  • 2 cups boiling water

Instructions

  1. Preheat your oven to 350°F. Lightly spray a 9 x 13-inch baking pan with cooking oil.
  2. In a blender, crush the pretzels until fine. Mix with melted butter and sugar in a bowl and press into the bottom of the prepared pan. Bake for 10 minutes, then cool on a rack.
  3. In a mixing bowl, beat softened cream cheese and sugar until smooth. Fold in thawed whipped cream topping. Chill for 15 minutes before spreading over the cooled pretzel crust.
  4. In a saucepan, bring 2 cups of water to boil. Dissolve the vegan gelatin in boiling water, stirring well. Add sliced strawberries, then pour over the cream cheese layer.
  5. Refrigerate for at least 4 hours or until set before serving.
