Ingredients
- 1 tbsp extra-virgin olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3/4 – 1 lb ground beef
- 24 oz marinara sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 32 oz ricotta cheese
- 2 eggs
- 1 cup cooked spinach, drained and chopped
- 1/4 cup mozzarella cheese
- 1/4 cup shredded Parmesan
- 1 box jumbo shells
- 2 cups mozzarella cheese
- Fresh parsley, for serving
Instructions
- Preheat oven to 350°F (175°C).
- Cook jumbo shells until al dente; drain and set aside.
- In a skillet, heat olive oil and sauté bell peppers until soft. Add ground beef and cook until browned, then mix in marinara sauce and seasonings.
- In a bowl, combine ricotta, spinach, eggs, mozzarella, garlic powder, and salt to make the filling.
- Stuff each shell with the ricotta mixture and place in a baking dish with some meat sauce on the bottom.
- Pour remaining meat sauce over stuffed shells and top with extra mozzarella.
- Cover with foil and bake for 20 minutes; uncover and bake for another 15 minutes until bubbly.
