- 1 medium spaghetti squash
- 4 tsp olive oil (divided)
- Sea salt
- 1 tbsp olive oil (divided)
- 2 cloves garlic
- 1/2 lb ground beef
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 1/2 cup marinara sauce
- 1 tsp Italian seasoning
- 2/3 cup ricotta cheese
- 1/3 cup grated parmesan cheese
- 1 tbsp olive oil
- 2/3 cup mozzarella cheese (shredded, divided)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with sea salt.
- Place cut-side down on a roasting pan and roast for 30–35 minutes until tender.
- In a skillet, heat olive oil and sauté minced garlic until fragrant. Add ground beef and cook until browned, seasoning with salt, pepper, marinara sauce, and Italian seasoning; simmer for 5 minutes.
- In a mixing bowl, combine ricotta cheese with parmesan and season to taste.
- Once squash is roasted, flip the halves cut-side up, fluff strands with a fork, fill with the ground beef mixture, then dollop with the ricotta blend.
- Top each half with shredded mozzarella cheese and bake for an additional 10 minutes until melted.
