  • 1/2 cup panko bread crumbs

  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sriracha
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon rice vinegar
  • 2 cups cooked rice
  • 20-ounce can pineapple chunks, drained
  • Chopped green onions, for garnish

Instructions

  1. In a large mixing bowl, combine ground beef or turkey, panko crumbs, onion, garlic, egg, soy sauce, honey, ginger, salt, and pepper. Mix until fully combined.
  2. Shape the mixture into 1-inch meatballs.
  3. Heat a skillet over medium heat; cook the meatballs for 5-7 minutes on each side or until cooked through.
  4. In a separate bowl, whisk together soy sauce, honey, rice vinegar, and sriracha for the sauce.
  5. Serve cooked rice in bowls topped with meatballs, pineapple chunks, and drizzle with sauce. Garnish with green onions.
