  • ½ pound turkey strips
  • 3 medium shallots
  • 16 ounces frozen peas
  • 1 pear
  • 1 teaspoon Dijon mustard
  • 1 lemon (zested and juiced)
  • ½ cup parsley
  • Freshly ground black pepper

Instructions

  1. Prepare the pear by peeling, slicing, and dicing it. Toss with lemon juice in a small bowl and set aside.
  2. Heat a large skillet over medium heat. Add turkey strips and cook until golden brown, then remove using a slotted spoon.
  3. In the same skillet, add sliced shallots and cook until softened, then stir in the Dijon mustard.
  4. Add peas and diced pears; stir for about 5 minutes until warmed through.
  5. Remove from heat and stir in half of the turkey strips, parsley, and black pepper.
  6. Serve in a large bowl topped with remaining turkey strips and garnished with lemon zest.
