- 3 medium shallots
- 16 ounces frozen peas
- 1 pear
- 1 teaspoon Dijon mustard
- 1 lemon (zested and juiced)
- ½ cup parsley
- Freshly ground black pepper
Instructions
- Prepare the pear by peeling, slicing, and dicing it. Toss with lemon juice in a small bowl and set aside.
- Heat a large skillet over medium heat. Add turkey strips and cook until golden brown, then remove using a slotted spoon.
- In the same skillet, add sliced shallots and cook until softened, then stir in the Dijon mustard.
- Add peas and diced pears; stir for about 5 minutes until warmed through.
- Remove from heat and stir in half of the turkey strips, parsley, and black pepper.
- Serve in a large bowl topped with remaining turkey strips and garnished with lemon zest.
