- 3/4 cup granulated sugar
- 1/4 cup + 1 tbsp tapioca starch
- 1 tsp vanilla extract
- 1 tsp smoked paprika or cinnamon
- 1 tbsp unsalted butter (for topping)
- Egg wash: 1 egg yolk + 1 tbsp milk
Instructions
- Prepare your pie crust using your favorite recipe and refrigerate if necessary.
- Peel and cube the peaches into 1-inch pieces to maintain texture.
- In a mixing bowl, combine the cubed peaches, lemon juice, sugar, tapioca starch, vanilla extract, and smoked paprika. Stir until well mixed.
