  • 2 Tablespoons sugar
  • 1 Tablespoon pepper
  • 1 Tablespoon coriander
  • 1 Tablespoon cumin seeds
  • 1 small cinnamon stick
  • 3 cloves
  • 1 Tablespoon kosher salt
  • 1 Tablespoon sugar
  • 1 Tablespoon dried oregano
  • 1 Tablespoon paprika
  • 1 Tablespoon chili powder
  • ½ Tablespoon garlic powder
  • 1 Tablespoon kosher salt
  • 1 Tablespoon fresh black pepper

Instructions

  1. Toast whole spices (coffee beans and cardamom) in a dry skillet over medium heat until fragrant.
  2. Grind toasted spices in a spice grinder until roughly ground.
  3. In a mixing bowl, combine ground spices with the remaining ingredients; mix thoroughly.
