  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • 8 oz cremini mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • Salt & freshly cracked black pepper to taste
  • 2 medium Yukon Gold potatoes, cut into ½-inch cubes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • ½ tsp dried oregano
  • 2 tbsp butter
  • 4 oz cremini mushrooms, sliced
  • ¼ cup sun-dried tomatoes, drained and chopped
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • Salt & freshly cracked black pepper to taste

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Sauté chicken strips seasoned with garlic and herbs until browned.
  2. Add sliced mushrooms, bell pepper, and zucchini; stir-fry until just tender.
  3. For roasted potatoes, toss potato cubes with olive oil, garlic, Parmesan cheese, and seasonings. Roast at 400°F for 20-25 minutes until crispy.
  4. In the same skillet, melt butter; add mushrooms and garlic. Stir in chopped sun-dried tomatoes and cream; simmer until thickened.
  5. Return chicken and veggies to the skillet; sprinkle mozzarella cheese on top to melt.
  6. Serve immediately over roasted potatoes.
