- 1 tbsp olive oil

- 8 oz cremini mushrooms, sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- Salt & freshly cracked black pepper to taste
- 2 medium Yukon Gold potatoes, cut into ½-inch cubes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- ½ tsp dried oregano
- 2 tbsp butter
- 4 oz cremini mushrooms, sliced
- ¼ cup sun-dried tomatoes, drained and chopped
- 2 cloves garlic, minced
- 1 ½ cups heavy cream
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- Salt & freshly cracked black pepper to taste
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat. Sauté chicken strips seasoned with garlic and herbs until browned.
- Add sliced mushrooms, bell pepper, and zucchini; stir-fry until just tender.
- For roasted potatoes, toss potato cubes with olive oil, garlic, Parmesan cheese, and seasonings. Roast at 400°F for 20-25 minutes until crispy.
