Instructions

- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix sugar, oil (or melted butter), eggs, vanilla extract, lemon juice, and zest until smooth.
- Combine wet and dry ingredients carefully; do not overmix.
- Fold in grated zucchini gently.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring it to a wire rack.
- For the glaze, whisk powdered sugar with lemon juice until smooth; drizzle over cooled bread.
