  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, cut into chunky pieces
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 9 oz vegan beef or portobello mushrooms (optional)
  • 4 cups vegetable stock
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • 2 large bay leaves
  • 2 sprigs fresh thyme (or 1 teaspoon dried)
  • 2 sprigs fresh rosemary (or 1½ teaspoons dried)
  • ¼ cup soy sauce (or Tamari)
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon white or cane sugar
  • 4 tablespoons all-purpose flour (or cornstarch)

Instructions

  1. Chop all vegetables into bite-sized pieces for even cooking.
  2. In a large Dutch oven over high heat, add oil and sear the vegan beef or mushrooms until golden brown. Remove and set aside.
  3. Reduce heat to medium; sauté onions, carrots, celery until soft. Add garlic and cook another 30 seconds.
  4. Sprinkle in flour while stirring to coat; cook for about 1-2 minutes.
  5. Gradually pour in vegetable stock while stirring to prevent lumps. Add rutabaga/swede, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary.
  6. Bring to a boil then reduce heat to medium-low; simmer uncovered for about 45-50 minutes until potatoes are soft.
  7. Return seared protein back into the stew about 10 minutes before serving.
  8. Serve hot after removing bay leaves and herb stalks.
