  • 4 Tbsp melted coconut oil
  • ¾ cup coconut sugar
  • 2 cups almond flour
  • ¼ cup tapioca flour
  • ½ tsp baking soda
  • 1 tsp vanilla
  • 1 tsp almond extract
  • 1 cup white chocolate chips
  • 16 oz softened cream cheese (dairy-free if needed)
  • ⅓ cup coconut sugar
  • 1 tsp peppermint extract
  • Whipped coconut cream for topping
  • Candy canes for decoration

Instructions

  1. Preheat oven to 350°F. In a mixing bowl, combine egg, melted coconut oil, vanilla, almond extract, and coconut sugar until smooth.
  2. Fold in almond flour, tapioca flour, baking soda, and sprinkles until well combined.
  3. Press dough into greased 9-inch springform pan and poke holes in the bottom. Bake for 20-24 minutes until golden. Allow to cool.
  4. Melt white chocolate over low heat until smooth; set aside to cool slightly.
  5. In a new bowl, beat softened cream cheese with coconut sugar and peppermint extract until creamy.
  6. Mix in melted white chocolate until fully incorporated.
  7. Pour filling into cooled crust and level off the top. Chill in the refrigerator for at least 6 hours or overnight.
  8. Before serving, pipe whipped coconut cream around the edges and top with crushed candy canes.
