Ingredients

Scale
  • 1/2 cup vegetable oil (or 1/4 cup oil and 1/4 cup applesauce)
  • 1 1/2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose or whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups shredded zucchini
  • 6 tablespoons unsweetened cocoa powder (for frosting)
  • 1/4 cup butter (or plant-based alternative)
  • 2 cups powdered sugar
  • 1/4 cup milk (or plant-based milk)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix vegetable oil, sugar, and vanilla until well blended.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually combine the dry mix with the wet ingredients, then stir in the shredded zucchini.
  4. Pour the batter into the prepared pan and bake for 25 to 30 minutes until firm.
  5. For frosting, melt cocoa powder and butter together; cool slightly. Mix powdered sugar, milk, and vanilla until smooth, then stir in the cocoa mixture.
