Ingredients

  • 2 medium zucchini
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • Fresh basil for garnish
  • 1 tsp dried oregano

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease a baking dish.
  2. Slice the zucchini lengthwise and layer them in the baking dish. Sprinkle with oregano.
  3. Spread half of the ricotta over the zucchini, followed by half of the marinara sauce. Repeat with remaining ingredients.
  4. Top with shredded mozzarella cheese.
  5. Cover with aluminum foil and bake for 25-30 minutes. Uncover and bake for an additional 10-15 minutes until golden brown.
  6. Let cool slightly before serving and garnish with fresh basil.
