- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 1 tsp dried Italian herbs
- Salt & freshly cracked black pepper to taste
- 2 large Yukon Gold potatoes, cut into 1-inch cubes
- 3 tbsp olive oil
- ½ cup grated Parmesan cheese
- 5 cloves garlic, minced
- 1 tsp dried rosemary
- 2 tbsp butter
- 8 oz cremini mushrooms, sliced
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese for sauce
- 2–3 tsp white truffle oil
- ¼ cup fresh basil leaves
- Shaved Parmesan cheese for topping
Instructions
- Preheat your oven to 200°C (400°F).
- Toss potato cubes in olive oil, minced garlic, rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
- Combine chicken slices with olive oil, garlic, Parmesan, herbs, salt, and pepper. Grill or sauté for 2-3 minutes per side until golden brown.
- In a skillet, melt butter over medium heat; add mushrooms and garlic until browned. Stir in heavy cream and Parmesan until smooth. Blend with truffle oil and basil.
- Serve roasted potatoes topped with grilled chicken and drizzle the creamy sauce on top.
